Simple healthy muesli
For those unfamiliar with this dish, granola is a snack or breakfast meal that includes oats, sunflower seeds, sesame seeds, shredded coconut, almonds, and other desired ingredients. There are millions of varieties out there, but I'm totally obsessed with homemade granola, especially this healthier version!
I got the recipe from a family friend - thanks Glinda Straddeck! I eat it most mornings for breakfast, which consists of light Greek yogurt with a spoonful of cottage cheese, a few berries or bananas, and a handful of granola. I never get sick from it and love how full it is!
What I LOVE about homemade granola:
- Less sugar and fewer calories.Most store-bought cereal brands have around 200 calories per serving and are loaded with sugar. This homemade granola recipe is only 100 calories per serving!
- Friendly Freezer.I like to make a large batch and store it in my freezer.
- Fast and easy.You can prepare and cook homemade granola in 30 minutes!
Healthy granola in 5 steps
1.Mix dry ingredients.Place all dry ingredients in a bowl: whole oats, sliced almonds, sunflower seeds, raw sesame seeds, and unsweetened raw coconut flakes.
2.Make the syrup.Mix butter, sugar, honey, salt and vanilla in a saucepan. Bring the mixture to a boil, remove from the heat and stir in the baking soda.
3.Pour the syrup over the granola mixture.. Pour the syrup over the oat mixture and mix to coat evenly.
4.Roast meat.Pour the mixture onto a greased or lined baking sheet and bake for about 18-20 minutes, stirring once.
5.Serve or save.Let the granola cool completely in the pan so it can set and create the granola curls we all love.
Granola Adjustments:
- Mach is vegan.Replace coconut oil with butter and agave nectar with honey.
- Add dried fruit.Raisins, Craisins or freeze-dried fruit
- Make it nut free.Substitute seeds (like pumpkin or sunflower) or dried fruit.
- Substitute flaxseed.Replace flaxseed with brown sesame
- Make it gluten free.This recipe is gluten-free as long as you make sure your oats are gluten-free. Gluten occurs naturally in wheat, rye and barley, but not all manufacturers guarantee their products are gluten-free. Check the packaging to be sure! To make gluten-free granola, make sure your oats are gluten-free.
Is muesli healthy?
The key to understanding whether or not granola is healthy is the sugar content! Many granolas are packaged with added sweeteners. When serving granola over sugary yogurt or with a fruit bowl, crank up the sugar levels. The serving size of muesli is small as it can contain a lot of calories. This recipe contains about 5 grams of sugar per serving (¼ cup). Also, consider whether the recipe includes whole grains (fiber) and protein. This recipe provides one gram of fiber and two grams of protein in each ¼ cup serving.

Ingredients
- 4 1/2 Bags old-fashioned oatmeal (no pressure cooking or steel cutting)
- 1/2 Taxes raw sunflower seeds
- 1 full glass unsweetened grated coconut (I love Bob's Red Mill)
- 1 full glass sliced raw almonds
- 6 soup spoon raw brown sesame , or substitute the flaxseed
For the syrup:
- 6 soup spoon Butter or coconut oil
- 6 soup spoon light brown sugar
- 6 soup spoon mel
- 1/4 teaspoon Sal
- 1 1/2 teaspoon Vanilla extract
- 3/4 teaspoon Natriumbicarbonat
instructions
Preheat oven to 315 degrees and spray or line a large baking sheet with parchment paper.
In a large bowl, combine all dry ingredients: rolled oats, sunflower seeds, coconut, almonds, and sesame seeds. Stir to combine and set aside.
Make the sauce by adding butter to a large saucepan. Melt butter over medium heat.
Add all sauce ingredients EXCEPT baking soda.
Bring the mixture to a boil, and when it boils, remove from the heat and stir in the baking soda.

Pour the mixture into the prepared pan and spread into an even layer.
Bake 8 minutes. Remove from the oven and mix the mixture, then gently press with the spatula to lay flat again in the pan. Bake an additional 8-12 minutes until golden brown.
For best results and delicious granola "chunks," allow the granola to cool completely in the pan before stirring or chopping.
This recipe makes about 8 cups of granola. Serving size is ¼ cup.
Store leftover granola in an airtight container or freezer-safe ziplock bag for up to 3 months.
